So I have just recently discovered Chick Peas aka Garbanzo Beans, I was trying to find another type of protein I could incorporate into my diet because chick, fish and turkey get old after awhile.

Not only are chick peas protein packed but they leave you full for hours. This Chick Peas salad is super easy to make, and is perfect for lunch or a light dinner.
Its Loaded with:
Feta Cheese: a Greek brined curd white cheese made from sheep’s milk or from a mixture of sheep and goat’s milk. It is a soft, brined white cheese with small or no holes, a compact touch, few cuts, and no skin. It is formed into large blocks, and aged in brine. Its flavor is tangy and salty, ranging from mild to sharp.
Medjool Dates: Soft and Chew, they contrast perfectlywith the earty feta cheese and the cumin spiced dressing. They Are are high in calories but full of nutrients and antioxidants that are linked to many health benefits.
Persian Cucumbers: They are a must for crisp fresh crunch and are perfect due to their size, cut them in to moon shape pieces and they pair perfect with the garbanzos.
Cherry Tomato’s : add a juicy flavor.
Red Pepper: They add a nice sweetness to the Salad, you can dice them up or roast them.
Basil or Mint: I love to top my salad with leaves of fresh herbs for a light herbal finish.

1st step : add the veggies, dates, chick peas and parsley then toss all together.
2nd sprinkle on the cheese, remaing herbs
3rd add your dressing made from Lemon Juice & zest, Garlic, Extra Virgin olive oil, and toasted cumin seeds.
4 serve it up!!
This Chick Peas salad has been my go to lunch lately, Its full of protein, from the chick peas, Its hardy enough to be a meal on its own or can be doubled as a healthy side dish, They Chick Peas hold up well in the fridge so they are great for meal prep.
Recipe Tips :
- Taste and adjust. They key to making a great salad is tasting and adjusting until you have a balance of flavors you love.
- Cut everything into small pieces. The best bit of the salad is when you get a little bit of everything in a single bit. Cut your cucumbers, dates, and tomato’s and red peppers into small pieces that way you get a little of every flavor.
- Save some herbs and cheese for garnish. If you make the salad ahead of time save the mint leaves to add at the last minute same can go for the goat cheese.
